Deep Fried Turkey - A Delicacy in the South

A turkey is a large bird that can be used in many delicacies. In the Southern United States, especially Louisiana, deep fried turkey is very popular. It is ideal for outdoor parties and barbecues. When you deep fry a turkey you make the skin crispy and retain the juiciness inside. For deep frying the perfect temperature is between 325 and 365 degrees F. If your turkey is less than 12 pounds the frying time is 2 1/2 minutes per pound. If the turkey is more than 12 pounds the frying time is 3 minutes per pound.

A turkey deep fryer contains special equipment like a pot, burner, lifting rack, thermometer and more. The amount of oil required to fry a 12 - 15 pound turkey is 1 1/2 to 2 gallons. Deep frying of turkey should not be done indoors for safety reasons, only outdoors.

Deep fried turkey from a stainless steel turkey fryer should be consumed immediately. If there are any leftovers they should be stored in the fridge 2 hours after cooking. Any areas which have been in contact with the turkey needs to be cleaned properly. The oil should be completely cool before filtering and reusing.
